IT Order

Brut, Extra Dry, Dry.

They’re the names of the sugar left in the wine, from the driest to the softest: Brut up to 12 grams per litre, Extra Dry from 12 to 17, Dry from 17 to 32. They look backwards, and they are: Extra Dry is sweeter than Brut. SERALBA makes two, Brut and Extra Dry, for two moments of the same night.

The scale, in grams.

The scale is European and applies to every sparkling wine: Brut Nature under 3 grams per litre, Extra Brut up to 6, Brut up to 12, Extra Dry from 12 to 17, Dry from 17 to 32, Demi-sec from 32 to 50. «Dry» means dry, and yet here it’s the sweetest of the three: it’s a story of old words, not of logic. Just remember that Extra Dry sits in the middle.

Where the sugar comes from.

From the second fermentation, the one in the autoclave. The yeasts turn sugar into alcohol and bubbles; when the wine is ready, you decide how much sugar to leave, or to add with the final dose. Very little for a Brut, a bit more for an Extra Dry. It’s not «extra» sugar in the everyday sense: we’re talking about less than a teaspoon in a glass.

What you taste in the glass.

The Brut is dry, taut, clean: it ends and leaves you wanting the next sip. The Extra Dry is softer and rounder, with the fruit coming through more. The Dry is truly sweet: for the end of a meal, for dry pastries. SERALBA Brut has 6.6 grams per litre, SERALBA Extra Dry 16.5. Same base wine, same hills, 11.5% vol both.

The hour: advice, not a rule.

The Extra Dry is for the light: the aperitivo, the first glass, the sun still up, a board of things to nibble. The Brut is for the night: dinner, the real dish, the record, two a.m. in the kitchen. That’s what we do. The only real rule is another one: together they’re both good, and nobody’s checking.

The two bottles

Three quick questions.

Is the Brut stronger than the Extra Dry?

No. The alcohol is the same, 11.5% vol in both. Only the sugar left changes, and so how dry the wine feels.

Is there a sweet Prosecco?

Yes: the Dry, from 17 to 32 grams per litre, and the Demi-sec, sweeter still. They’re rarer, and they suit the end of a meal.

What does Millesimato mean?

That at least 85% of the grapes come from a single year, the one on the label. It has nothing to do with sugar: a Millesimato can be Brut or Extra Dry.
