IT Order

How cold, which glass.

Between 6 and 8 °C, in a glass that lets the aromas breathe, poured gently. That’s all, and it’s advice, not rules: Prosecco is good even in the wrong glass, especially in company. But if you feel like doing it well, here’s how we do it.

Valdobbiadene, explained · 5 November 2026 · 3 minutes

The temperature.

The Consortium says 6-8 °C, and we agree. Three hours in the fridge are enough; in a hurry, a bucket with water and ice, half and half, and in twenty minutes you’re there. The freezer works but gets forgotten: we say it from experience. Too cold switches off the aromas, too warm swells the foam: in between is the right glass.

The glass.

The tulip, a glass with a bit of belly that narrows at the top, is the one that holds bubbles and aromas best. The flute is fine and looks the part. A normal white wine glass is perfectly good. The right glass, in the end, is the clean one within reach.

Opening and pouring.

Remove the cage holding the cork with your thumb, turn the bottle, not the cork, and let it out with a sigh, not a bang: the bang throws bubbles away. Pour with the glass tilted, gently, up to a third, then top up. The foam has time to settle.

Afterwards.

A sparkling-wine stopper and the fridge: the next day it’s still good, to drink or for a risotto. The teaspoon in the neck is a nice legend, but the stopper works better. Never throw away half a bottle.

With what.

Advice, not rules. The Extra Dry loves aperitivo things: a board, something fried, a piece of cheese, olives. The Brut stays at the table for the whole dinner: fish, risotto, pizza, vegetables, even a plate of pasta. The rest, the night decides. «Un goto de vin no se nega a nissun», they say here: a glass is never denied to anyone.

The night

Three quick questions.

Do you put ice in the glass?

If you like, yes. We prefer a cold bottle and a glass without ice, which waters it down. But nobody’s checking.

How long does an open bottle keep?

With a sparkling-wine stopper, in the fridge, one or two days: it loses a few bubbles, not the taste. Without a stopper, finish it tonight.

Can you drink Prosecco at dinner, with the meal?

Yes, especially the Brut: dry and light, it works from start to finish. For us it’s exactly the dinner wine.
